Artisan Ice Cream

& Pastry

We were asked by the team at Canal to create their second shop and kitchen head quarters in Linienstraße in Mitte. In a relatively small space we created a full production kitchen, and a retail area, divided by a timber and glass structure with a sliding door.

 

We worked in our three staple materials: Timber, Steel and Stone. In this case Elm timber, from a beautiful very old tree we were able to buy from "Hoeksche Waard" in the Netherlands. The warm tones of the Elm was offset by the use of stainless steel panelling throughout the front part of the space.

The counter was a real challenge as it contains two very different pieces of equipment, a cooling unit for ice cream and a differently dimensioned cooling display for the famous Canal Eclairs. Wrapped in solid Elm machined to resemble the Eclair shape we created a seamless solution topped with a beautiful white marble top.
