Canal No2
Artisan Ice Cream
& Pastry
The Canal team tasked us with designing their second shop and kitchen headquarters in Linienstraße, Berlin Mitte. Despite working within a relatively compact space, we successfully created a fully operational production kitchen alongside a stylish retail area, cleverly separated by a timber and glass partition with a sliding door for flexible use.
Staying true to our design principles, we employed our three signature materials—timber, steel, and stone. For this project, we chose Elm timber from a single, magnificent tree over 100 years old, sourced from "Hoeksche Waard" in the Netherlands. The entire interior was crafted from this one tree, which lends a unique continuity and character to the space. The warm, inviting tones of the Elm contrast elegantly with the stainless steel panelling used throughout the front section of the space, achieving a refined balance between natural warmth and contemporary sleekness.
A particular challenge was the bespoke counter, which needed to accommodate two distinct pieces of equipment: a cooling unit for ice cream and a separate cooling display for Canal’s famous éclairs. To address this, we devised a seamless solution, enveloping both pieces of equipment in solid Elm wood machined to echo the shape of the éclairs. The counter is topped with a stunning white marble surface, providing both a visually striking finish and a durable, high-quality touch.
This project exemplifies our commitment to integrating functionality with bespoke design, creating a space that not only fulfils Canal’s operational requirements but also enhances their brand experience through thoughtful material selection and meticulous craftsmanship.
